Naturally occurring in citrus fruit, Citric Acid is used as an acidifier, flavouring agent, emulsifier or as a natural preservative in the food industry. Citric Acid can be added to ice cream and gelato as an emulsifying agent to aid in preventing fat separation, or to caramel based sauces to prevent crystallisation of sugar. It can also be used in place of fresh lemon juice, with 1/4 tsp of Citric Acid being the equivalent of 1tbsp of lemon juice.
