Gum Acacia is the dried, gummy sap from the stems and branches of Acacia Senegal and other related species. Also known as Gum Arabica, or Indian Gum it functions as a suspending or emulsifiying agent, stabiliser and prevents sugar crystallisation. Used widely in a variety of processed foods, such as sweets, snacks, beverages, baked goods, frozen dairy desserts and more. Gum Acacia is also high is soluble fibre and has a minimal impact on taste and texture.
