Guar Gum also known as guaran is made from legumes called guar bean. A type of polysaccharide or long chain of carbohydrate molecules bonded together, it's composed of two sugars called mannose and galatose. Used extensively to thicken and bind foods, Guar Gum is widely used in yoghurt, dressings, sauces as a thickener and to hold emulsion, in baked goods to increase yields or in gluten-free baking to bind ingredients together. It's very useful in reducing crystalisation and improving texture in ice cream and gelato. Guar Gum is tasteless, odourless, low in calories and high in soluble fibre.
