Derived from red algae, Agar Agar is reknowned for it's high gelling properties. It is an excellent thickening agent for a wide range of applications and is a suitable substitute for gelatin in recipes. When used in conjuction with other gums such as Locust Bean Gum a softer gel can be produced.

  • Dosage: For a firm set use 6-10g/litre or 2-4g/litre for a softer set gel. Note: Agar Agar must be mixed into cold liquid and then heated to 85¼C to activate it's gelling properties
